Serves: 4-6

Preparation time: 10 minutes


Ingredients:

70g pistachio nuts, roasted and shelled
1/3 cup olive oil
150g feta, crumbled
1/3 cup thick Greek yoghurt
1/2 lemon, zested
1 cup fresh herbs (e.g. basil, mint parsley)
1 garlic clove
1 tsp chilli flakes

Method:

Blitz the pistachio and olive oil in a food processor until finely chopped.
Add the feta, yoghurt, lemon zest, herbs, garlic and chilli flakes.
Blitz until the mixture is well combined and has a lovely rustic texture.
Season with sea salt to taste and serve with crackers.
