A Delicious Collaboration: Ashley & Co. x The Good Oil

Golden sunflowers stretch across the Southbridge plains in Canterbury, their towering blooms turning gently toward the light. From these fields, The Good Oil transforms the seeds into their Extra Virgin Sunflower Oil, capturing the essence of the land in every drop.
We’ve partnered with The Good Oil to release a limited-edition Sunflower Oil, Extra Virgin Cold Pressed, ready for summer salads, pan-fried fish, or roasted vegetables - a golden, versatile staple for the modern kitchen.
Once ready, the seeds are transported just down the road to Rolleston and are cold pressed using a single mechanical process, with no heat, solvents, or chemical refining steps. Extracted under gentle pressure and triple filtered to remove fine sediment, the oil retains its natural golden colour, delicate aroma, and nutritional integrity. The result is a pure extra virgin sunflower oil that reflects both the quality of the seed and the care taken at every step of production.

We spoke with Andy O’Malley-Mora from The Good Oil to learn more about the cold-pressing process, what you can expect from the oil and his favourite way to enjoy it.
“We believe cold pressing is the most natural, healthy method and produces the highest quality oil. An oil that is cold pressed has been produced with quality being the highest priority, rather than maximising the amount of oil extracted. Cold pressed oils also do not go through any further processing which is typically used to remove flavour and colour to standardise the oil but can also strip natural antioxidants. The result of this for The Good Oil is a natural oil that is golden in colour and retains its natural attributes, including antioxidants.”
Made from high oleic sunflower seeds, this oil contains more monounsaturated fats and fewer polyunsaturated and saturated fats than standard sunflower oils. This unique composition delivers excellent oxidative stability and a high smoke point, making it ideal for both cooking and dressings. It also naturally provides vitamin E, a plant-based antioxidant that helps preserve freshness over time.
The oil has a natural golden hue and a delicate sunflower seed flavour. Its subtle profile makes it a versatile kitchen companion - enhancing salads and dips while complementing a wide variety of dishes without overpowering them.
“Our customers use The Good Oil for a huge range of uses, but most people use it as an everyday cooking oil. Our oil is highly versatile, suitable for frying, roasting, dressing and dips. It’s even great for most baking applications as well. The versatility is due to the special high oleic seed that we grow for The Good Oil, it has a mild taste that doesn’t overpower dishes, but can really shine as a dressing or for dips. The high oleic nature of the sunflower seed also provides heat stability for cooking, reducing the risk of the oil smoking or breaking down."

"There are a variety of reasons that we chose to grow the high oleic sunflowers that we do, but we believe it is the healthiest sunflower variety for oil, and it makes such a wonderful cooking oil. High oleic put simply, means the oil is very high in monounsaturated fat which helps make the oil heat stable and it also has a very smooth, almost buttery, texture and flavour. It’s beautiful for cooking, but when used for dipping, the delicate sunflower seed flavour really comes through. The fatty acid profile of our special 6+ foot sunflowers is almost the opposite of a standard sunflower, and they are 100% GE free.
The Good Oil EV Sunflower Oil happens to be my personal favourite oil to use for everyday cooking, I just love the flavour. I also really love to use it in baking. As soon as strawberry season arrives my partner and I make a crumble to celebrate using the sunflower oil.”
